This is a lunch classic: Sesame Ginger Tofu & Kale Salad. One of my greatest life changes came through my relationship with food. I am obsessed with mindful eating and the food my family consumes. It’s been about 5 years since we’ve been Pescatarians (in case you missed the how and why, read my life as a pescatarian (meat with no feet diet), and we’re still reaping the rewards of that decision.
I became an organic, all natural perimeter grocery store shopper (where the process free stuff is). I’ve shared some of my favorite recipes with my family and close friends over the years, and am finally sharing with my blog fam too. Olive Oil, Garlic, Kale, Tofu (extra firm), Sesame Ginger Dressing (found in the vegan/all natural section of the store), Salt & Pepper
Directions: Sautee oil and garlic until golden brown, add kale and broth/liquid of choice then add lid to steam. Keep in mind the kale will wilt down a significant amount so less kale is not more. Steam for about 5 minutes then set aside. Tofu: drain and cut into blocks, pan fry with olive oil, allowing tofu to get crispy on all sides, then season with salt and pepper. Add the tofu to the kale with dressing to mix flavors and warm the dressing. Enjoy.
